A delicious baked eggplant gratin recipe
  1. Preheat the oven to 180°C/356°F.
  2. Wash and cut the eggplants in slices.
  3. Place them on a baking tray covered with parchment paper.
  4. Bake (turning them upside down once during baking) until they're soft.
  5. Wash and cut the tomatoes in slices.
  6. Cut the cheese in thin slices.
  7. Add one slice of tomato on each eggplant slice and add salt.
  8. Cover with cheese and add oregano.
  9. Spray extra virgin olive oil and bake until the cheese melts (about 20/25min).
