This herbs bread with feta cheese is…all you want when you arrive home hungry and want to eat something.
It is what happened today when my son arrived. I had just cut this bread and ate the first slice with my daughter, as it was before lunch. He arrived hungry and ate about 3 slices!
It is pretty easy to do and it is perfect for a buffet, or just to have around at home. It is tasty and with a light flavor because of the fresh herbs.
When I saw this recipe on Chocolate & Zucchini blog, which I love, I couldn’t resist. Like other great recipes from Clotilde, this one has just been added to my favorite’s list.
I admit that feta cheese made its part while deciding to prepare this herbs bread. We’re just fond of this cheese and, especially me and my daughter, eat it regularly in salads.
So, you just have to give it a try! It is very simple and quick to prepare and I assure you it is going to be on your favorite’s list too ;-). I only changed a few things of the original recipe (less oil and I used low fat yogurt).
Ingredients:
- 1 Tbsp of butter (me salted as it was the one I had home)
- 2 Tbsp sesame seeds
- 1 1/4 cupsflour (all purpose)
- 1 Tbsp baking powder
- 3 eggs
- 3 Tbsp extra virgin olive oil
- 1/2 cup + 2 Tbsp light yogurt
- salt
- pepper
- 7 ounces feta cheese
- about 1 cup of roughly chopped fresh herbs (I used parsley, mint, basil and chives)
Instructions:
Turn on the oven to 350°F.
Cover a 9x5in baking pan with parchment paper. Grease it with some butter and add half of the sesame seeds.
In a bowl mix flour and baking powder.
In another bowl mix eggs, yogurt, salt, pepper, extra virgin olive oil, feta cheese and choped herbs.
Pour the flour mix into the ther bowl and mixbut not overmixing. Just like a plum cake, it’s ok if there are some lumps.
Pour the misture into the pan and add the remaining sesame seeds on top.
Bake for 50 minutes (or until golden on the surface) and let it cool on a rack
